Chicken soup

This is the bomb! The flu bomb! The sniffly nose bomb! The I feel like I need a hug bomb! It just happens to be my son’s favourite soup, and he was feeling a little off so I made this for his lunch. It freezes very well, so the rest is in the deep box for next time someone needs to feel better.

Ingredients

10 cloves garlic, crushed

1 red onion, diced

2 carrots, diced

3 celery sticks, diced

1 can creamed corn

2 tbs vegetable stock powder

1 roast chicken, torn apart

3 desiree potatoes, diced chunky

1L water

Handful of parsley

A couple of sprigs of thyme

Splash of olive oil

 

Method

Shake a splash of olive oil into a large pot and heat. Add the garlic, onion, celery and carrots, cooking together for five minutes. Now add your water, stock powder, creamed corn and shredded chook. Bring to the boil and then simmer for ten minutes. Add the potatoes and simmer for a further twenty minutes. Add your herbs and serve piping hot!!

Creamy Chicken Broth

My family really enjoy broths and soups! Here’s one that I try and pump lots of different veges into. There is something quite lovely about parsnips, the underrated earth dweller that it is. And parsnips should be married to carrots, so they had to be included! The rest is just whatever you’ve got growing or available at your local store. Have a go, whatever veges you use, use a variety!

Ingredients

4 chicken thighs, sliced into 4 portions

1 red apple, diced

2 parsnips, diced

2 carrots, diced

2 tbs butter

4 mushrooms, sliced

2 tbs chicken broth powder

3 litres of water

3 sprigs of flat leaf parsley

5 sprigs of thyme

3 rashers of bacon, torn/sliced

250 ml cream (optional)

 

Method

Place the butter, bacon and chicken into a large pot and brown the meats on a medium heat. Now add everything else and simmer for 40 minutes. If you would like to make it creamy, this is when to add the cream, if not, don’t! Stir the soup around and help the chicken tear up with a fork. Simple and scrumptious! Enjoy your lovely broth!

Bacon & chicken broth

This recipe surprised me! I left it on and we came home from swimming lessons to the aroma of smokey bacon wafting through the house! The soy sauce and apple cider vinegar combination is delicious! The kids asked for seconds, and because it is a good healthy meal, of course they could!

Ingredients

6 thick smoked bacon rashers

3 chicken breasts

1 capsicum, sliced

2 shallots, sliced

2 washed potatoes, chopped

5 whole garlic cloves

3 tbs soy sauce

¼ cup apple cider vinegar

Handful parsley

Water

 

Method

Place all ingredients in slow cooker and then add enough water to just cover everything. Cook on slow and low for 5-6 hours. Once ready, use a fork to pull the chicken apart a bit and stir things up. Add a handful of chopped parsley and serve!

Cabbage soup

There were just a few ingredients in my fridge the other night, and so this soup really was the only option for dinner! Turns out, my family enjoyed it and I think our bodies were grateful for a nice clean broth.

Ingredients

½ head of cabbage, chopped

1 onion, diced

1 sweet potato, diced

2 L chicken stock

Any herbs you like (I used a few sprigs of thyme, oregano and parsley)

Salt and pepper to your liking

 

Method

Place everything in a large pot and bring to the boil. Take the heat down and simmer for 20 minutes. Blend with a blending stick or transfer to blender for smoothing. Once there are no lumps you are ready. This soup is fantastic and your body will thank you for it! Serve immediately and enjoy!
